How To Make Tocaya Organica Like Bowls

I love being basic – it includes a lifestyle of being healthy and great food. Avocado toast? Yum. Sparkling water? Oh baby. Acai Bowls? Let’s keep em going!

I really don’t get why the passive aggression towards “baseness”. Maybe people that are unable to make good life choices so they resort to eating junk food and shit on people who like to eat clean? I think yes.

This is the type of food models like to eat! Not stereotyping or anything, but check out “What We Eat In A Day” by Romee Strijd, a Victoria Secret model.

Moist, juicy, and full of flavor – this chicken recipe can resemble the Fajita Del Rey bowl – with the popular recommendation of Chicken Tinga and Queso Fresco:

This bowl checks off all the boxes regarding the foundation of our diet:

  • Minimal processed foods (No refined carbohydrates)
  • Whole Foods
  • Lean In Protein (Chicken & beans)
  • Healthy fats (Avocado and hint of dressing)
  • Minimal oil (Don’t see grease all over)
  • Vegetables (Fajitas and pico de Gallo)

It’s a great way to stay healthy, while on the go. Perfect for working class individuals – as it can get pricey! But I do have a cheaper alternative for you! Cook my Chicken Carnitas dish, and it will satisfy your Tocaya Organica craving tenfold!

Cons Of Tocaya Organica?

The portion size for the price! Los Angeles is expensive, let’s be real. You’re going to expect to pay around $14 for a bowl (including tax), and on top of that, the portion size is pretty small. Without saying, you’re paying for the quality of the food, and Tocaya Organica is definitely a few levels up compared to Chipotle.

Ingredients:

  • Chicken Breast – 3 lbs
  • Onion – Diced
  • 4 tbsp cumin
  • 4 tbsp coriander
  • 4 tbsp chili powder
  • 2 tbsp kosher salt
  • 4 cups water
  • 4 tbsp soy sauce
  • 4 tbsp apple cider vinegar
  • Cilantro
  • Brown Rice
  • Black Beans
  • Avocado
  • Garlic Cloves
  • Oregano or bay leaves

Optional Ingredients:

  • Corn
  • Cheese

Utensils Required:

Dutch Oven or if you don’t have one, just use a regular pot. It won’t taste as good and the chicken won’t be as moist, but you’ll be able to make the dish nonetheless. If you’re on the fence about a dutch oven, get one! We like using the Stuab one.

Instructions:

  1. Preheat your oven to 400 deg F

2. Turn the heat on stove to medium high, heat up dutch oven, add some avocado oil, let it heat up, then add onion and sauce. After 2 mins, add garlic and turn heat to medium. Sauté for 5 minutes. Add the spices mentioned from above.

3. Add the liquids – water, soy sauce, and vinegar. Add oregano or bay leaves here, depending on what you want. Stir the mixture up!

4. This is where you add in the chicken. Leave your chicken as breasts, and bring the heat to a low and allow the chicken breast to simmer in the dutch oven. (If you don’t have a dutch oven, let the chicken simmer on low heat in the pot for 45 minutes)

5. While you’re cooking the chicken and letting it simmer, you can focus on something else – cut up some avocados, prepare some beans, get some corn ready – entirely up to you! Use the pictures below for inspiration and ideas!

I may even pair my bowl with a spinach salad – with some all natural sesame dressing

6. After 45 minutes, take out the chicken from the dutch oven or from the pot. Take each individual chicken breast and lay them on a cutting board. Here is where you start shredding the chicken!

7. After shredding the meat, put the chicken back in the pot or dutch oven, then allow to simmer. This will slowly evaporate the sauce and the flavor will become more concentrated! (This is a really delicious dish when you have leftovers and leave them in the fridge over night, the flavors from the spices soak in even more)
